On April 18, Rina Uchiyama, an actor and wife of Eisaku Yoshida, updated her Instagram (@rinauchiyama_official) with photos of seven dishes that use fermented seasonings that she has recently become obsessed with.
Uchiyama posted photos of dishes such as "potato potage" made with onion koji, "sweet sake soy milk pudding" made with amazake, and "coconut chicken curry" made with onion koji and curry koji, and wrote, "It was almost a one-plate meal."
He continued, "I used books as reference and got advice from friends to make it using two types of koji: rice koji and hishio koji made from barley and soybeans.It's interesting because of the differences in nutritional value and taste."
